When your fellow pregnant friend posts a recipe on Facebook that catches your eye AND you realize you have all the ingredients you tell your husband to get the kid in the bath because you have mini cobblers to make! I love a good peach cobbler and this miniature one is just perfect and tasty! Oh and it took less than 45 minutes to make and taste. I like to sub ingredients but sometimes you need real sugar and real butter to get that great taste. I am wondering how it would taste if you used oat flour instead of flour and increased the baking powder..hmm. Next time trial perhaps! Here is the link to the original recipe here. Bite Sized Peach Cobbler
- 1 cup sugar
- 1/2 cup white flour
- 1/2 cup coconut flour
- 2 tsp baking powder
- a dash of salt
- 3/4 cup milk
- 1/2 stick of melted butter (1/2 c.)
- brown sugar
- handful of diced frozen peaches (thawed)
Preheat oven to 350 degrees.
Divide the melted butter into each regular size muffin tin.
Stir together the sugar, flour, baking powder, salt and milk.
Divide batter between all 12 muffin tins.
Place several diced peaches on top. As many to your liking.
Sprinkle with brown sugar and cinnamon.
Bake for 12 minutes.
Cool and enjoy with ice cream or as is!
